His name is Lorenzo De Nadai. Born in 1991 in Val di Fiemme, among the majestic Dolomites of Trentino, Lorenzo knew from an early age that cooking would be his future.
After attending hospitality school, he continued his studies in cuisine and restaurant management at the Institute of Advanced Training in Tione di Trento.
It was here that he had his first decisive encounter: Giorgio Nardelli, an internationally renowned chef, immediately recognized Lorenzo’s early talent and became one of his most influential mentors.
During his three years at the Institute, Lorenzo opened himself up to the world. He met chef Andrea Berton and gained valuable experience in haute cuisine, taking part in international events and working in luxury venues in Singapore, Bangkok and Taipei.
In 2012, at the end of his educational journey, he entered the Internazionali d’Italia competition in the under-23 category and won first prize in this prestigious culinary contest with a Mediterranean-inspired dish.
That success earned him a six-month internship in Senigallia at Mauro Uliassi’s restaurant. Uliassi, a three-Michelin-starred chef, also involved him in a street food event aboard his own food truck, the renowned Uliassi Street Good.
After completing his studies, driven by a desire to explore more exotic culinary cultures, Lorenzo spent one year in Australia and two years in New Zealand, further enriching his experience in Malaysian and Filipino restaurants.
In 2017, he moved to Switzerland for a year and a half to manage the kitchen of the historic Kulm Hotel in St. Moritz, a five-star superior property and one of the most prestigious names in Alpine hospitality.
After several years of high-level international experience, Lorenzo De Nadai felt the call of his beloved Dolomites. At the same time, he remembered how much he had enjoyed working on Uliassi’s food truck.
That memory sparked an idea: to return to Italy and buy a food truck of his own.
