Tout d\u2019abord, parlez-nous bri\u00e8vement de votre formation et de votre exp\u00e9rience professionnelle<\/h2>\n<p>Apr\u00e8s avoir fr\u00e9quent\u00e9 l\u2019\u00e9cole h\u00f4teli\u00e8re, j\u2019ai \u00e9t\u00e9 s\u00e9lectionn\u00e9 pour une haute formation, un cours sp\u00e9cialis\u00e9 de cuisine o\u00f9 sont admis seulement 15 jeunes venant de toute l\u2019Italie. Le si\u00e8ge de cette formation est dans la r\u00e9gion italienne du Trentin-Haut-Adige, et on y enseigne de la cuisine \u00e0 l\u2019\u0153nologie, en passant par la chimie. D\u00e8s ma jeunesse, je me suis beaucoup investi dans mon parcours professionnel, \u00e0 partir de 17 ans j\u2019ai toujours travaill\u00e9 pour des restaurants \u00e9toil\u00e9s. \u00c0 18 ans, je travaillais chez Trussardi Milano avec le Chef Andrea Berton. Il m\u2019emmenait souvent lors d\u2019\u00e9v\u00e9nements \u00e0 l\u2019\u00e9tranger, toujours dans des endroits de luxe, \u00e0 Singapour, \u00e0 Bangkok, \u00e0 Taipei. Au cours de mon parcours, j\u2019ai rencontr\u00e9 de nombreux Chefs pr\u00e9par\u00e9s qui m\u2019ont transmis leur d\u00e9vouement et leur passion pour ce m\u00e9tier. En 2012, j\u2019ai re\u00e7u le titre de champion international de cuisine m\u00e9diterran\u00e9enne U23. J\u2019ai eu la chance de pouvoir suivre un stage de 6 mois chez Uliassi \u00e0 Senigallia, \u00ab\u00a03 \u00e9toiles Michelin \u00e0 l\u2019heure actuelle\u00a0\u00bb, o\u00f9 non seulement j\u2019ai appris beaucoup de choses, mais j\u2019ai notamment eu la chance de travailler aux c\u00f4t\u00e9s du chef lors d\u2019un \u00e9v\u00e9nement \u00e0 bord de \u00ab\u00a0l\u2019Uliassi Street Good\u00a0\u00bb, son food truck mobile.<\/p>\n<p>Apr\u00e8s avoir termin\u00e9 mes \u00e9tudes et acquis des exp\u00e9riences professionnelles tr\u00e8s importantes, j\u2019ai d\u00e9cid\u00e9 de me remettre en question et d\u2019acqu\u00e9rir de nouvelles exp\u00e9riences de travail et de vie \u00e0 l\u2019\u00e9tranger, en commen\u00e7ant par l\u2019Australie, puis par la Nouvelle-Z\u00e9lande et, enfin, par la Suisse en 2017, o\u00f9 j\u2019ai g\u00e9r\u00e9 le Kulm Country Club, un restaurant d\u2019\u00e9lite au sein de l\u2019h\u00f4tel historique Kulm Hotel *****S \u00e0 Saint-Moritz.<\/p>\n<p>Contact\u00e9 \u00e0 nouveau par des entrepreneurs n\u00e9o-z\u00e9landais, j\u2019ai d\u00e9cid\u00e9 d\u2019y aller pour suivre l\u2019ouverture d\u2019un nouveau restaurant en tant que conseiller. Ceci m\u2019a \u00e9galement permis de couvrir diff\u00e9rentes t\u00e2ches, telles que la formation du personnel et la conception de l\u2019am\u00e9nagement d\u2019une cuisine, g\u00e9rant ainsi la naissance d\u2019un restaurant \u00e0 partir de z\u00e9ro, ainsi que le suivi des autres restaurants en tant que Chef Ex\u00e9cutif.<\/p>\n<p>&nbsp;<\/p>\n<h2>2. Qu\u2019est-ce qui vous a pouss\u00e9 \u00e0 ouvrir un food truck ? Quand avez-vous eu cette id\u00e9e?<\/h2>\n<p>Apr\u00e8s avoir beaucoup voyag\u00e9 \u00e0 l\u2019\u00e9tranger et vu diff\u00e9rents dynamiques et syst\u00e8mes, sachant que je voulais vivre en Italie, j\u2019ai commenc\u00e9 \u00e0 r\u00e9fl\u00e9chir aux strat\u00e9gies professionnelles et au style de vie possible. C\u2019est un univers professionnel o\u00f9 l\u2019organisation est incontournable, mais qui me donne d\u00e9j\u00e0 tant de satisfaction.<\/p>\n<p>&nbsp;<\/p>\n<h2>3. Quels ont \u00e9t\u00e9 les principaux obstacles et difficult\u00e9s que vous avez d\u00fb surmonter?<\/h2>\n<p>\u00catre un bon Chef est un excellent point de d\u00e9part, mais \u00eatre entrepreneur, c\u2019est toute autre chose. Il faut consid\u00e9rer l\u2019aspect global de chaque d\u00e9tail, et toutes les formalit\u00e9s et d\u00e9marches administratives n\u00e9cessaires n\u2019aident certainement pas. En l\u2019espace de quelques mois, j\u2019ai \u00e9t\u00e9 projet\u00e9 dans un nouvel univers. Cependant, bien heureusement, dans mon domaine, on s\u2019habitue rapidement \u00e0 la flexibilit\u00e9, et \u00e0 surmonter les moments difficiles sous pression. Comme toujours\u00a0: vouloir, c\u2019est pouvoir\u00a0!!<\/p>\n<p>&nbsp;<\/p>\n<h2>4. Pouvez-vous d\u00e9crire bri\u00e8vement votre projet?<\/h2>\n<p><a href=\"https:\/\/www.vsveicolispeciali.com\/fr\/street-food-truck\/pro-x-food-truck-dolomiti-street-food-gourmet-cuisine\/\">Dolomiti Street Food<\/a> est n\u00e9 dans le Val di Fiemme, une vall\u00e9e italienne situ\u00e9e dans les Dolomites. Il s\u2019agit d\u2019un projet innovant dans le cadre duquel j\u2019utilise mon bagage culturel afin de cr\u00e9er des recettes et des plats bas\u00e9s principalement sur des ingr\u00e9dients locaux. \u00c0 partir de cette base solide, je cr\u00e9e des menus avec des produits authentiques, pr\u00e9sent\u00e9s de mani\u00e8re simple, rapide et portant un tr\u00e8s grand soin au go\u00fbt. En \u00e9t\u00e9, je participe aux nombreux \u00e9v\u00e9nements publics qui sont organis\u00e9s sur ce territoire, une zone tr\u00e8s touristique. Cependant, d\u00e8s que j\u2019ai un moment de libre, j\u2019aime rouler \u00ab\u00a0en toute libert\u00e9\u00a0\u00bb pour proposer du v\u00e9ritable street food un peu partout. Je fais aussi beaucoup d\u2019\u00e9v\u00e9nements priv\u00e9s o\u00f9 je fa\u00e7onne un menu sur mesure, en fonction des besoins du client, en gardant toujours un style sous-jacent. Je travaille \u00e9galement dans le secteur des conseils B2B et je suis actif dans le domaine des cours de cuisine \u00ab\u00a0cibl\u00e9s\u00a0\u00bb pour les amateurs.<\/p>\n<p>&nbsp;<\/p>\n<h2>5. Comment se passe votre exp\u00e9rience professionnelle avec le tout nouveau projet Dolomiti Street Food\u00a0?<\/h2>\n<p>Je suis tr\u00e8s heureux, car cela se passe vraiment bien, c\u2019est un projet qui pla\u00eet aux clients, et lors de ce premier mois d\u2019activit\u00e9, nous avons d\u00e9j\u00e0 re\u00e7u d\u2019excellents retours\u00a0! Notre planning est plein jusqu\u2019en septembre, et ce, quasiment que par le bouche-\u00e0-oreille\u00a0! Un food truck g\u00e9r\u00e9 par une application mobile est une belle nouveaut\u00e9 dans le secteur. L\u2019application s\u2019av\u00e8re-t-elle utile?<\/h2>\n<p>Oui, l\u2019<a href=\"https:\/\/www.vsveicolispeciali.com\/fr\/amenagement-vehicules-magasin-commerce-ambulant\/food-truck-camion-magasin-pour-vente-ambulante\/pro-x-food-truck\/\" rel=\"noopener\" target=\"_blank\">application<\/a> &#8211; en constante \u00e9volution &#8211; est vraiment utile. Question s\u00e9curit\u00e9, elle est vraiment pratique, car \u00e0 la fin de la journ\u00e9e, avant de partir, vous pouvez v\u00e9rifier que tout est en place et que les portes sont ferm\u00e9es.
